Wine cellars need to be professionally conditioned to preserve the wine at the correct ambient temperature and humidity. The wine cellar environment will need to be properly constructed and insulated and actively cooled by our specialist units that will maintain the long-term storage environment of around 12 degrees centigrade with relative humidity of 60 to 65 %. Humidity is especially of importance when wine bottles have corks and this relative humidity and temperature allows wines to slowly mature, reduce any mould growth and keeps corks from drying out. It will also prevent label spoilage. Once a temperature has been set, it should not fluctuate as this can stress the wine and cause expansion and contraction in the wine which in turn puts pressure on the cork and may cause premature leaking and spoilage. Therefore, specialist cooling is essential.
The great vineyards around the world have subterranean caves to store their wines at the required coolness and humidity but this came about by luck in some ways as the Romans mined parts of France for salt and chalk around 80 BC. In the 1600’s winemakers began to use these abandoned underground structures to store their wine. Even modern vineyards construct their own underground caves for storage. To recreate this environment in a domestic property is a challenge but we have the expertise and track record to provide the perfect outcome.
